Artichoke Pâté
The artichoke is one of the most characteristic vegetables of Apulian gardens, even if its tradition is quite recent. Introduced only in the mid-twentieth century, it quickly became one of the most widespread crops thanks to the region's strong suitability, so much so that Puglia is in first place in Italy for its production. The pâté is prepared with the most tender leaves and the addition of vinegar, salt, and extra virgin olive oil. It has a soft and creamy consistency and a very delicate taste. Excellent for bruschetta but also as a pasta sauce, to flavor grilled white meats and baked fish in foil. Excellent for enriching risottos.
