Description
Lampascioni are wild onion bulbs with a bitter taste and represent a true Apulian typicality. Rich in beneficial nutritional properties, they accompany many traditional dishes and are always present on the festive table. After being cleaned and blanched in vinegar, they are chopped and reduced to a cream according to an original recipe that preserves and retains all the natural flavor. The pâté is a pleasant condiment, it is excellent for dressing friselle and canapés or for accompanying salads. It is perfect on croutons and slices of traditional bread, and it can be used as an accompaniment to boiled or roasted meats.
