Description
It is a monofloral type which is difficult to find because cherry trees’ blossoming occur very early, during a period when bees use nectar for their own nourishment and the production of honey for human consumption is more contained. It is possible to obtain it only where there are large crops, such as in Puglia. It has a rather liquid consistency and a pale yellow color, but it can vary up to darker shades. Natural crystallization occurs slowly. It has an extremely pleasant flavor reminiscent of the taste of cherry, with an aftertaste reminiscent of the taste of bitter almond.
